Re Gan Mian

Re Gan Mian (Hot Dry Noodle; Simplified Chinese: 热干面) is a typical breakfast fare of Wuhan, the capital of Hubei province of China. It is made of hand-pulled, wheat-based noodles over which soy sauce, sesame paste, pickled vegetables, chopped chives and rice vinegar are added. The noodles are mixed with the added ingredients just before consumption. It is very popular and is usually sold in boxes on carts along the streets of Wuhan

Instructions: Using a large cone-shaped strainer, lower the noodle into a pot of boiling soup, stir to make sure the noodle is heated evenly until it is done(around half a minute); then strain the noodle with a few shakes and serve it in a bowl. Top it with soy sauce, sesame paste, pickled vegetables, chopped chives chilli sauce and rice vinegar to taste.
